<p>First, try this out. Hide the ruler and all toolbars except for the Formatting Bar. This can be done from View in the menu bar.</p>

Also, get addicted to Full Screen mode. It can be invoked by Cmd-Opt-U. Move your mouse to the top of the screen to pull up the Formatting Bar and change the background color to white. Here's what you get.

Sure, you can find a billion "distraction free" writing tools in the Mac App Store, but don't forget Pages does this too, and it's just a keystroke away.
